Learned a "new way to me" way to smoke game/the catch...
No need to get that expensive smoker if you have a turkey cooker I found out this weekend. What you do is take your largest pot that comes with the cooker, put enough wood chips/chunks of your choice to cover the bottom. Salt brine your duck/turkey breast for atleast one day. Lay a piece of tin foil across the top of the chips and set your bird right on top of it. Place the lid on and put a brick on top of if it to get a tight fit. Fire the burner and get it to about medium heat and watch it smoke! You can do a duck in 20-30min and a turkey breast in 40-45 minutes!(once you get the pot smoking) And you wouldn't think it would be moist and tender, but WOW it turns out awesome! My dad did large turkey breast and it turned out perfect.
